Ingredients
  

Filling
  • 1 lb ground beef
  • 1 tbsp taco seasoning
  • 4 large low-carb tortillas
  • 4 small low-carb tortillas
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup diced tomatoes
  • 2 tbsp butter for cooking
  • 0.25 cup salsa for serving
  • 2 tbsp water

Method
 

Brown the seasoned beef
  1. Brown the ground beef in a skillet over medium-high heat, breaking it apart as it cooks, about 6–7 minutes. Stir in the taco seasoning and 2 tablespoons water, simmering for 2 minutes.
Assemble the crunchwraps
  1. Lay a large tortilla flat and layer the center with beef, cheese, lettuce, diced tomatoes, and a small tortilla on top. Keep the layers centered so the wrap can seal cleanly.
  2. Fold the edges of the large tortilla up and over the filling, pleating as you go to fully enclose it. Press gently at the top to ensure the seam stays closed.
Pan-crisp the tortillas
  1. Heat the butter in a large skillet over medium heat. Place the crunchwrap seam-side down and cook for 2–3 minutes, until golden and crisp.
  2. Flip carefully and cook for 2–3 more minutes, until golden on both sides. Press lightly with a spatula so the tortilla shell browns evenly.
Serve
  1. Slice in half and serve immediately with sour cream and salsa. Add extra salsa on top if you want more tang.

Notes

For the crispiest keto crunchwraps, seal the pleats tightly before searing and avoid moving them while they cook on the first side. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat in a skillet over medium heat until warmed and re-crisped (microwave softens the shell). Freezing is not recommended because the tortillas lose their crunch. For a dairy-light option, use lactose-free sour cream and lactose-free cheddar (or a lactose-free cheese blend) without changing the cooking steps.
