Ingredients
  

Chicken breasts
  • 2 lb boneless, skinless chicken breasts Use thawed chicken for even cooking.
Buffalo sauce and dairy
  • 1 cup buffalo sauce Choose a classic or hot buffalo sauce to control heat.
  • 8 oz cream cheese, softened Soften so it melts smoothly into the dip.
  • 1 cup ranch dressing Stir well for a tangy, creamy base.
  • 1.5 cup shredded cheddar cheese Use freshly shredded if possible for best melt.
For serving
  • 1 Celery sticks Optional for crunch and cool bite.
  • 1 tortilla chips Serve as the dippers.

Method
 

Slow-cook the chicken
  1. Place the chicken breasts in the crockpot and pour the buffalo sauce over the top so the meat is evenly coated.
  2. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is fully cooked and shreds easily.
  3. Shred the chicken directly in the crockpot using two forks, then stir to redistribute the saucy chicken.
Make it creamy
  1. Stir in the cream cheese and ranch dressing until fully melted and combined into a smooth, creamy base.
  2. Stir in half the shredded cheddar cheese until it melts into the dip.
  3. Sprinkle the remaining shredded cheddar cheese on top so it forms a melty layer.
  4. Cover and cook for another 15–20 minutes on low until the cheese is melted and the dip is bubbly.
Serve
  1. Serve warm straight from the crockpot with celery sticks and tortilla chips for dipping.

Notes

For extra creamy texture, soften the cream cheese fully before stirring it in so it melts without lumps. Refrigerate leftovers in a covered container for up to 3–4 days; reheat in the crockpot on low or in the microwave until hot and bubbly. Freezing isn’t ideal because the dairy can break slightly after thawing. For a lighter option, use reduced-fat cream cheese and reduced-fat ranch to cut calories while keeping the same dip-style consistency.
