Ingredients

Potatoes, base soup
  • 3 lb russet potatoes Peeled and diced
  • 1 onion Diced
  • 4 garlic Minced
  • 4 cup chicken broth
  • 1 tsp salt
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
Creamy, cheesy finish
  • 1 cup heavy cream
  • 8 oz cream cheese Cubed
  • 2 cup shredded cheddar
Toppings
  • 1 bacon bits For serving
  • 1 sour cream For serving
  • 1 green onions For serving
  • 0.5 cup extra cheddar For serving

Equipment

  • 1 Dutch oven

Method

Slow-cook the potato base
  1. Add diced russet potatoes, diced onion, minced garlic, chicken broth, salt, garlic powder, onion powder, and black pepper to the Crockpot. Stir briefly so the potatoes are evenly coated, with visible spices suspended in the broth.
  2. Cook on Low 6-8 hours or High 3-4 hours until the potatoes are fall-apart tender. You should see potatoes breaking down when pressed, and the broth should look creamy even before adding dairy.
Mash and make it creamy
  1. Use a potato masher to mash about half the soup directly in the Crockpot. The mixture will thicken as mashed potato starch blends into the liquid.
  2. Add cubed cream cheese and heavy cream, then stir until the cream cheese melts completely. The soup should turn glossy and smooth with no visible cream cheese lumps.
  3. Stir in shredded cheddar until melted and smooth, then taste and adjust seasoning. The texture should be velvety, and the cheddar should disappear into the base.
Serve
  1. Serve the soup loaded with bacon bits, sour cream, green onions, and extra cheddar. The toppings should look piled generously on top of the creamy potato chunks.

Notes

For the creamiest texture, mash about half the potatoes while they’re hot so the starch naturally thickens the soup. Store leftovers in the refrigerator up to 4 days; reheat gently on the stove or in the microwave, adding a splash of broth if it thickens too much. Freezing is not recommended because dairy can break when thawed and reheated. For a lighter swap, use half-and-half instead of heavy cream and reduce cheddar slightly.
