Prep and layer
- Preheat the oven to 350°F and grease a 9x13-inch baking dish for easy release and even browning.
- Cut each cinnamon roll into quarters and arrange half of them in an even layer in the bottom of the dish so the base bakes through.
- Toss the sliced peaches with granulated sugar, cornstarch, cinnamon, and lemon juice, then spread evenly over the cinnamon roll pieces for a thick, gooey filling.
- Scatter the remaining cinnamon roll pieces over the peach layer to create pockets of cinnamon-swirled dough.
Bake and finish
- Bake for 30–35 minutes at 350°F, until golden and bubbling, covering with foil if browning too quickly to prevent over-darkening.
- Let cool for 10 minutes, then drizzle with the reserved icing from the cinnamon roll cans before serving for a gooey, sweet finish.
Notes
For the gooeyest bars, slice peaches fairly evenly and spread the peach mixture in a single layer so the cornstarch thickens uniformly. Store covered in the refrigerator up to 3 days; rewarm individual pieces in the microwave for 15–25 seconds. Freezing is not recommended because the peaches can soften after thawing. For a lighter option, use reduced-sugar cinnamon rolls and reduce the added sugar to 1/4 cup if your peaches are very sweet.
