olive oil mixture
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.25 salt to taste
  • 0.25 black pepper to taste
pepperoncini garlic butter
  • 0.5 cup unsalted butter
  • 0.5 cup sliced pepperoncini plus 2 tablespoons brine
  • 2 tbsp pepperoncini brine
  • 3 garlic minced
  • 2 tbsp fresh parsley chopped

Method
 

Prep and season the chicken
  1. Rub the chicken breasts with olive oil, paprika, salt, and pepper until evenly coated, with a visible spice dusting on the surface.
Preheat and grill
  1. Preheat a grill or grill pan to medium-high heat and lightly oil the grates so the chicken releases cleanly.
  2. Grill the chicken for 5–6 minutes per side, until it reaches an internal temperature of 165°F and shows clear grill marks and juices that run mostly clear.
Make the pepperoncini garlic butter
  1. Melt the butter in a small saucepan over medium heat until fully liquid and glossy.
  2. Add the garlic and cook for 30 seconds, stirring until fragrant without browning.
  3. Stir in the sliced pepperoncini and brine, then keep the sauce bubbling gently as the peppers soften.
  4. Simmer for 2–3 minutes, until slightly reduced and lightly thickened, so it clings to the chicken.
Serve
  1. Spoon the pepperoncini garlic butter generously over the grilled chicken, then garnish with fresh parsley so it looks bright and fresh.

Notes

For best juiciness, let the grilled chicken rest off the heat for 3 minutes before topping so the juices redistribute. Refrigerate leftovers in a sealed container for up to 3 days; rewarm gently so the sauce stays glossy. Freezing is not recommended because the butter sauce can separate after thawing. Dietary swap: use garlic-infused olive oil instead of butter only at serving time for a lighter sauce, keeping the rest the same.
