Method
Make the crust
- Preheat the oven to 325°F. Press the graham cracker crumbs, melted butter, and granulated sugar into the bottom of a 9-inch springform pan.
Mix the filling
- Beat the cream cheese and granulated sugar until smooth. Beat in the eggs one at a time.
- Mix in the vanilla extract and sour cream until fully combined. Pour the filling over the crust.
Bake and cool
- Bake for 50–55 minutes at 325°F, until the center is just slightly jiggly. Place the springform pan on a sheet pan to catch any drips.
- Turn off the oven and let the cheesecake cool inside with the door cracked for 1 hour. Then chill the cheesecake for at least 4 hours before topping.
Cook the passion fruit topping
- Simmer the passion fruit pulp and granulated sugar in a saucepan until bubbling. Stir in the cornstarch slurry and cook until thickened, about 2–3 minutes.
- Cool the topping slightly. Pour it over the chilled cheesecake and slice to serve.
