For the bread
  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 tsp salt
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 2 eggs
  • 0.5 cup vegetable oil
For the cream cheese swirl
  • 8 oz cream cheese softened
  • 0.25 cup granulated sugar
  • 1 egg
For the streusel
  • 0.5 cup all-purpose flour
  • 0.33 cup brown sugar
  • 3 tbsp unsalted butter cold, cubed

Method
 

Prep
  1. Preheat the oven to 350°F and grease a 9x5-inch loaf pan, leaving it ready for batter.
  2. Whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  3. Fold in the canned pumpkin puree, granulated sugar, eggs, and vegetable oil until just combined, stopping as soon as no dry flour shows.
Make the swirl
  1. Beat the cream cheese, granulated sugar, and egg until smooth, thick, and spreadable.
Assemble
  1. Pour half the pumpkin batter into the pan and spread it into an even layer.
  2. Spread the cream cheese mixture over the top layer.
  3. Add the remaining pumpkin batter over the cream cheese, then swirl gently with a knife for a marbled look.
Add streusel
  1. Combine the all-purpose flour, brown sugar, and cold unsalted butter with your fingers until crumbly with small uneven bits.
  2. Sprinkle the streusel over the top so the loaf is evenly covered.
Bake and cool
  1. Bake for 55–60 minutes at 350°F until a toothpick inserted in the center comes out clean; if the top browns too quickly, cover with foil.
  2. Cool in the pan for 10 minutes, then slice while the loaf is warm for the cleanest swirl cuts.

Notes

For the cleanest marbled swirl, make sure the cream cheese is softened enough to beat smoothly but not melted. Store tightly covered in the fridge for up to 4 days; freeze slices up to 2 months. For a dairy-light option, use a cream-cheese style plant-based spread with similar melting behavior—texture may be slightly less creamy but still swirls well.
