Preheat and season the rice
- Preheat the oven to 400°F and grease a 9x13-inch baking dish.
- Toss the warm rice with the rice vinegar, sugar, and salt, then press evenly into the bottom of the baking dish.
Build the salmon layer
- Combine the flaked salmon, mayonnaise, sriracha, and soy sauce in a bowl.
- Spread the salmon mixture evenly over the rice layer.
Broil and finish
- Broil for 4–5 minutes, until the top is lightly golden and bubbling.
- Top with green onions and sesame seeds, and serve with extra soy sauce and sriracha.
Notes
For the most even layer, press the seasoned rice firmly into the pan so it holds together under the broiler. Refrigerate leftovers in a sealed container up to 3 days; reheat at 350°F until warmed through. Freezing is not recommended because the rice texture and spicy mayo sauce can change. Dietary swap: use vegan mayonnaise and cooked, flaked salmon-style plant protein if you need a non-dairy option (flavor will differ slightly).
